Taking advantage of the first of the new potatoes, boxty is a fairly traditional Irish dish at this time of year. And the blueberries commonly picked around Lammas do liven up this meal. Why not invite all your friends and family over for a joyful blueberry potato pancake breakfast?

Serves: 4–6
Ingredients:
1 cup potatoes, mashed 4 tablespoons butter
2 eggs
1 cup potatoes, grated
1⁄2 cup all-purpose flour
1 teaspoon salt
1⁄4 teaspoon pepper
1⁄4 cup cream
1⁄4 cup blueberries
In a large bowl, beat the mashed potatoes and 2 tablespoons of butter on low speed. Add eggs and grated potatoes and mix well. Add flour, salt, and pepper. After that, add cream and mix well. Then fold in blueberries. In a large frying pan, heat the rest of the butter over medium-high heat. Drop 2 to 3 tablespoons of potato mixture into the pan and flatten to form pancakes. Fry until browned, flipping once. Repeat with remaining potato mixture.
