Harvest Squash Bake

Color of the day:  Crimson

It’s squash season! Zucchini and yellow squash are overflowing in grocery stores and farmers’ markets. Here is a simple recipe to enjoy the abundance of squash season.

You will need:
* 3 yellow squash
* 3 zucchini
* 1 red bell pepper
* 1 tomato
* 1 tablespoon olive oil
* Seasonings of your choice (I like to use Italian seasoning, celery seed, pepper, and sea salt.)

Heat an oven to 350 degrees F.

While the oven is heating, slice all the vegetables. Place them in a bowl and add the olive oil and the seasonings. Arrange the vegetables in a glass baking dish. Bake for one hour.

For a complete meal, add a green salad and some crusty bread. Enjoy the abundance of the season and give thanks to Mother Earth for beautiful, bountiful squash!
